fabienne and bruno schenk sold everything they had when they saw the potential of the vineyards in corbières' spectacular mountainous setting, and almost overnight, with hard work and dedication, have turned this vineyard around, achieving 3 stars for their wines in guide hachette for the last two vintages. it forms part of the terroir of quéribus, in the southern part of the well known appellation corbières. this region has clay and limestone soils and the vines are an average of 40 years old, with a blend of syrah, grenache and carignan. the grapes are hand harvested and destalked before a long maceration of 30 days. the wine is then transferred to french oak casks for 10 to 12 months. there are regular tastings at this stage to decide the optimum time to blend and bottle, creating a very high quality wine.
