cyril gautheron is the sixth generation of his family to cultivate his vines in fleys, a small village to the east of chablis. the vines are situated on slopes with a south-eastern exposure looking down on the picturesque serein valley and river. cyril does not work alone: his father alain and mother colette still work closely by his side. the harvest has been done by machine since 1984 as it allows the grapes to be picked quickly and if necessary at night, and this shows in the aromatic finesse present in these chablis wines. at harvest it is even clearer that the family still work as a team: cyril drives the tractor, while alain and colette stay at the wine presses and look after the work in the cellar. inside this modern winery the grapes are fermented in temperature controlled stainless steel cuves, and the wine is then left in contact with the lees for a further 9 months to add complexity. cyril has learnt his approach to winemaking from his father, a true craftsman in embracing modern technology to achieve a taste firmly rooted in the traditional expectation of the wine, creating very distinctive, green apple flavours with a complex aroma and a long nutty finish
