la ina is internationally recognised as one of the greatest finos on the market today. bodegas domecq has been producing exceptional sherries since 1730, and is famous for supplying the spanish and british royal families with their private sherry reserves, best noted by domecq holding the royal warrant as suppliers of sherry to hm the queen. la ina is cask aged using the system of fractional blending (solera) for up to six years under the protective layer of a natural yeast ceiling, which shields the wine from oxidation and adds complex flavours and aromas. the brightest jewels in domecq's considerable crown, however, have to be the selection of very old rare sherries that add exclusivity to any list. these are exceptional sherries from very special soleras, some of which were established over a century ago, and the solera for sibarita is in fact the oldest in jerez, dating back over 200 years to 1792. these precious sherries have achieved worldwide acclaim and are only found on the lists of top international restaurants.
