Sainsbury's have selected Casco Viejo Reposado and Don Agustin Reposado Reserva – both 100% Agave Tequilas – the first time a top quality Tequila has been sold to the public in a UK multiple retailer. Fiona Bayley spirits buyer at Sainsburys describes the new Tequilas "as a quantum leap in quality and flavour in line with the growth of the UK Tequila market and our policy of offering customers the very best spirit products in every category.”

Tequila was the only sector of the UK spirits market to show volume growth last year (up 7%+ according to Nielsen) and the premium 100% Agave Tequila category sector grew by an astounding 40%.

Casco Viejo & Don Agustin Tequilas are produced in Mexico by the Camarena family one of the largest owners of Agave plantations and the fourth largest Tequila distiller in the country. All Camarena Tequilas are produced from Agaves that they harvest, distill and bottle themselves.

35 ml Fresh Lime juice

25 ml Cointreau
5 Leaves of fresh mint.

Shaken with ice, double strained and served in a Rocks glass with a half
sugar rim, garnished with a lime wedge and mint leaf.

75ml Pineapple juice
10ml Lemon juice
20ml Gomme syrup
5 grammes Butter

Heat pineapple juice and then add butter to melt: add rest of ingredients, mix well and pour into a flute glass. Garnish with a slice of ginger.

Tequila terminology:

Tequila is the native drink of Mexico and is distilled from the juice of the Blue Agave plant. The “Denomination of Origin” law of Mexico has defined the area in which the blue agave is grown for making Tequila. It includes the state of Jalisco and some regions in the states of Guanajuato, Nayarit, Michoacán, and Tamaulipas all of which have similar reddish volcanic soil and climate.

The original tequila region is located mainly around the town of Tequila in the State of Jalisco with the best known tequila producing towns: Tequila, El Arenal and Amatitán located a few miles west of Guadalajara, and the region in Los Altos or highlands east of Guadalajara that includes Atotonilco, Tepatitlán and Arandas.

Tequila growing areas are also defined as either the “Lowlands” around the city of Tequila (approx 1,500 metres) and the “Highlands” (Los Altos) approx 2,000 metres or more. Generally tequila from the lowlands has a slightly earthier taste while those from the highlands are more subtle and fruity.

All the Camarena family plantations are in Los Altos.

Tequilas are defined by their content of Agave or by their colour and Aging

“Mixto” The basic Tequila, defined as a drink containing a minimum of 51% distilled juice from the Agave plant. The remainder of the liquid is sugar cane juice (as used to make rum). Mixtos are generally used in mixed drinks rather than drunk on their own.

“Agave” Tequila or “Blue Agave” or “100% Agave” Tequilas: Made entirely from the juice of Agave plants.

Tequila Aging Definitions

Blanco or Silver Tequilas: Bottled within 30 days of distillation. Most are bottled without any aging.

Oro (Gold): This is the No. 1 seller in Mexico and it is Blanco Tequila with some added caramel.

Reposado (Aged): Aged for a minimum 2 months in new American oak barrels.

Anejo or Extra Aged: Minimum 1 year in oak barrels

Super Anejo (New Category Mar 06) aged for over 3 years+

5ml Angostura bitters & 5ml Orange bitters

5ml Chambord Raspberry liqueur

Fill the head of a cocktail shaker with ice, infuse the bitters to colour ice and pour excess away.  Stir in Armagnac and Chambord and pour into a frozen Martini glass and garnish with raspberries or blackberries on a stick. . . enjoy

Anée Calvados 'Pays d'Auge' 10 year old XO is on sale in most larger Thresher, Bottoms Up and Wine Rack stores retailing at £19.99 for a 70cl bottle (40% VOL) in a gift tube .

Anée Calvados has been produced at Cormeilles in the heart Pays d'Auge, 20kms from Honfleur in Normandy since 1919.

To qualify for the Appellation Contrôlée 'Pays d'Auge' (highest ranking in Calvados), the spirit has to be produced from the special tannic apples that are grown in that region of Normandy to make one of the world's great brandies.

Anée Calvados is produced from a selection of more than 40 apple varieties and is distilled twice in copper pot stills to give superb aromas and ripe flavours.

The Calvados is then aged for at least ten years in oak casks before being blended to produce a rich, smooth, complex drink that is superb to drink neat, on the rocks or with food, particularly dishes flavoured with apples.

VINTAGE 2003 'VARIETAL' CIDER FROM NORMANDY

The 2003 vintage of Duché de Longueville the naturally sparkling cider from Normandy has now arrived in Sainsbury's stores.

No added yeasts, sugars or preservatives.

Duché de Longueville is m ade exclusively from pure pressed apple juice (not concentrates) and has no added sugars, yeasts or preservatives. This cider has a fine mousse that comes from the natural fermentation and is made from a minimum of 90% "Gros Oeillet" apples - a varietal that is highly regarded in Normandy for its delicious flavour and thirst-quenching acidity. The apple trees grow on a 650 hectare estate near Dieppe in Normandy & are pollinated by bees coming from hives strategically placed around the orchards. Following an unusually warm summer the crushing of the apples started at the beginning of November 2003.

Summer Time drinking with the refreshing taste of Provence

'Absente 55' liqueur aux Plantes d'Absinthe (55% vol.)

'Absente' with an alcohol (abv) of 55% is made with the same ingredients as the best Absinthe's of La Belle Époque and is renowned for its wonderfully complex aromas that come from a secret recipe that contains aniseed, angelica, cloves, mint, wormwood as well as other herbs and spices.

The word Absinthe comes from the Latin name for the plant - wormwood (Artemisia Absinthium), and the difference between 'Absente 55' and the original "Grande Absinthe" is just that the thujone component of wormwood has been reduced (< 10 ppm per litre) to comply with European regulations. So the only danger is you may enjoy the complexity of 'Absente 55' so much that you will become crazy about it!

'Absente 55' is produced and distilled in the Pays de Forcalquier, an area of Provence famous for its natural herbs and officially classified as a 'Site remarquable du Goût'. At the beginning of the last century there were 10 distilleries in Forcalquier but today only one remains - Distilleries et Domaines de Provence, an independent company founded in 1898.

'Absente 55' can be enjoyed straight on the rocks or with crushed ice. For those who like a less sweet taste, simply add fresh, cool water. To prepare 'Absente 55' in the traditional way, simply put a sugar cube on an Absinthe spoon, balance it over the glass and slowly pour the water. This dissolves the sugar and 'Absente 55' turns an opalescent green.

For those who are more adventurous, the sugar cube can be set on fire before water is poured over the cube flambé ! In London Barmen have also gone Wild about Absente, with West End bars like Met Bar, Zeta bar in Park Lane and Navajo Joe in Covent Garden creating on their menus several cocktails each based on 'Absente 55'.

‘Absente 55’ Absinthe now available in UK

‘Absente’ with an alcohol (abv) of 55% is made with the same ingredients as the best Absinthe’s of La Belle Époque and is now on sale in the UK.

Produced by Distilleries et Domaines de Provence, the only remaining distillery in the famous town of Forcalquier in the Provence hills, ‘Absente 55’ was the first Absinthe to legalised in France in the last century.

‘Absente 55’ is renowned for its wonderfully complex aromas that come from a secret recipe that contains aniseed, angelica, cloves, mint, wormwood as well as other herbs and spices. The only difference between ‘Absente 55’ and the original “Grande Absinthe” is that the thujone component of wormwood has been reduced (< 10 ppm per litre) to comply with European regulations. So the only danger is you may enjoy the complexity of ‘Absente 55’ so much that you will become crazy about it!

How to enjoy the unique taste of ‘Absente 55’
‘Absente 55’ can be enjoyed straight on the rocks or with crushed ice. For those who like a less sweet taste, simply add fresh, cool water. To prepare ‘Absente 55’ in the traditional way, simply put a sugar cube on an Absinthe spoon, balance it over the glass and slowly pour the water. This dissolves the sugar and ‘Absente 55’ turns an opalescent green. For those who are more adventurous, the sugar cube can be set on fire before water is poured over the cube flambé ! In London Barmen have also gone Wild about Absente, with West End bars like Met Bar, Zeta bar in Park Lane and Navajo Joe in Covent Garden creating on their menus several cocktails each based on ‘Absente 55’.

‘Absente 55’ was launched at the specialist Soho wine merchant Gerry’s of 74 Old Compton Street (Tel: 020 7734 2053) who boasts one of the widest ranges of Absinthes in the country and rapidly took over as “House Absinthe” with their bohemian clients…now Absente is spreading to the leafy suburbs, with the first listing by a major UK retailer.

From November 1st 2003 ‘Absente 55’ will be on sale in Waitrose at £19.99 for a 70cl bottle (55% vol). Richard Mew, Buyer at Waitrose says, “We selected ‘Absente 55’ because it was the best sample we tasted. It is a premium quality Absinthe that suits our selection at Waitrose and it also has the benefit of being a traditional French product”.

Now Waitrose customers will go “Wild like Oscar. . .”

Armagnac Fashion:

5ml Angostura bitters & 5ml Orange bitters
50ml Comte de Lauvia VSOP
5ml Chambord
Fill the head of a cocktail shaker with ice, infuse the bitters to colour ice and pour excess away. Stir in Armagnac and Chambord and pour into a frozen Martini glass and garnish with raspberries or blackberries on a stick. . . enjoy!

Henri Bardouin Pastis – Gold Medal Winner (International Spirits Challenge 2003)

Henri Bardouin - a genuine ‘Grand Cru’ Pastis’ is available in the UK through Waitrose supermarkets. Imported by Emporia Brands, Pastis Henri Bardouin is produced and distilled in the Pays de Forcalquier, an area of Provence famous for its natural herbs and officially classified as a ‘Site remarquable du Goût’.

At the beginning of the last century there were 10 distilleries in Forcalquier producing Pastis but today only one remains - Distilleries et Domaines de Provence, an independent company founded in 1898 and which still produces the finest Pastis named after its founder Henri Bardouin.

Derek Strange, head of Wines & Spirits at Waitrose said, "We were looking for a traditional Pastis to offer our customers and in a comparative tasting, Pastis Henri Bardouin showed the typicity we were seeking for this style of product, with its complexity of aroma and dimensions of flavours".

The tradition of ‘Le Grand Cru du Pastis’ - Under French law an aperitif can be called ‘Pastis’ provided it is made with liquorice (‘reglisse’ in French), anéthole (a constituent of Star Anise) and contains a maximum of 100g of sugar per litre. Today many cheap Pastis only contain these minimum ingredients and the tradition of slowly infusing herbs and spices individually with alcohol before blending is dispensed with. In the case of Pastis Henri Bardouin however, a complex recipe of 50 natural herbs is still used to produce a ‘Grand Cru’ Pastis’ with superb aromas and great length and complexity.

Rich in aroma and flavour, Henri Bardouin is recognised in France as the ultimate Pastis to be enjoyed as an aperitif or as a thirst-quenching long drink with plenty of water. The intense, rich flavour of Henri Bardouin requires only one part Pastis to 5-6 parts of water rather than 3-4 parts of water recommended for other Pastis brands so as every canny French connoisseur knows you get more for your money.
No wonder Pastis is still by far the largest selling spirit drink in France where over 6.5 million cases are consumed annually far outselling vodka and whisky.

Henri Bardouin Pastis should be poured into the glass first and then water added, chilled to 4°C. Only as the water and the Pastis blend do you see the distinctive colour and appreciate the full power of its complex aromas. The taste of Pastis Henri Bardouin is final testimony of its ‘Grand Cru’ quality: intense, with subtle herbal and oriental flavours and a refreshing bite of Star Anise.

VINTAGE 2002 NATURALLY SPARKLING CIDER FROM NORMANDY
HAS ARRIVED


The 2002 vintage of Duché de Longueville “Gros Oeillet” varietal cider has now arrived in Sainsbury’s and Tesco stores.
UK sales increased by 59%
For the third consecutive year sales in the UK of this naturally sparkling cider have increased and it is now outselling off the shelf most English cider in 500 ml bottles.
Duché de Longueville is made exclusively from pure pressed apple juice (not concentrates) and has no added sugars, yeasts or preservatives. The cider is made from a minimum of 90% “Gros Oeillet” apples – a rare French varietal harvested at a 650 hectare Normandy estate near Dieppe. The apple trees are pollinated by bees coming from hives strategically placed around the orchards.

The price of Duché de Longueville is unchanged this year at £1.49 for a 500 ml bottle (Alc.5%vol) and in July and August this year Sainsbury’s are promoting Duché de Longueville for Summer drinking with two bottles for £2.50 a saving of 48p.
Duché de Longueville varietal cider is an ideal accompaniment for many types of food, such as Normandy cheeses as well as pork dishes or fruit desserts.

Bartender from Blackpool to represent UK in International Cocktail Competition

John Farrell, Manager of The Duke of York Hotel in Blackpool is this year’s winner of the UK Bartenders Guild cocktail competition that took place at London’s Savoy hotel on 17 March.

Competing against 15 other contestants all using Calvados Busnel as the base, John produced a cocktail he has named ‘Calvana’ an unusual blend of Crème de Banane, banana and Calvados which was judged the winner by a panel of judges that included Bernard Taforel, Chairman of Distillerie Busnel and Jim Slavin, Secretary of the UKBG.

John’s first prize includes a visit to Distillerie Busnel in the heart of Pays d’Auge at Cormeilles and the honour of representing the UK at the ‘Trophée International des Calvados Nouvelle Vogue’ which takes place on 28 April in Deauville where he will compete against professional Bartenders from the following eight countries: Belgium, France, Germany, Holland, Italy, Luxembourg, Sweden, and Switzerland.

Calvados (5cl)
Crème de Banane liquer (3cl)
? Banana
Dash of sugar syrup
Single Cream
Method: Blend all ingredients and serve with crushed ice.

First Quench launches Anée Calvados 10 year old XO
National Tasting Weekend of Armagnac & Calvados in stores end November

First Quench has launched Anée Calvados ‘Pays d’Auge’ 10 year old XO in all Thresher, Bottoms Up and Wine Rack stores retailing at £19.99 for a 70cl bottle (40% VOL) in a gift tube.

Anée Calvados has been produced at Cormeilles in the heart Pays d’Auge, 20kms from Honfleur in Normandy since 1919. To qualify for the Appellation Contrôlée ‘Pays d’Auge’ (highest ranking in Calvados), the spirit has to be produced from the special tannic apples that are grown in that region of Normandy to make one of the world’s great brandies. Anée Calvados is produced from a selection of more than 40 apple varieties and is distilled twice in copper pot stills to give superb aromas and ripe flavours.

The Calvados is then aged for at least ten years in oak casks before being blended to produce a rich, smooth, complex drink that is superb to drink neat, on the rocks or with food, particularly dishes flavoured with apples.

National Tasting Weekend of Armagnac & Calvados with ‘£1 off’ in Thresher, Wine Rack & Bottoms-Up stores.

Nearly 300 leading Thresher, Wine Rack & Bottoms Up stores will be holding tastings for the public to discover and compare Calvados and Armagnac from 18-25 November with an offer of £1 off each bottle during tasting days.

Special three bottle tasting packs are being distributed to leading First Quench stores nationwide with background information and tasting notes. Managers will use these to organise the tastings and answer consumer enquiries in the run up to Christmas.

Each pack will contain: Anée Calvados XO 10 year old and ‘Comte de Lauvia’ XO Imperial 12 year old Armagnac (comparing Silver Medal winners in the 2002 International Wine and Spirit Competition) and also the ‘Comte de Lauvia’ VSOP Armagnac (for the chance to taste the introductory quality from Chateau de Campagne d’Armagnac in Eauze).
