A project that Jean-Luc Fossey has always secretly had in mind. He found its genesis in the late 2010s when he bought a multitude of barrels with different grains and bousinages and decided to place in them an eau-de-vie that he hoped would be the anniversary edition more than a decade later. However, he had to push his experiment even further in order to elaborate an exceptional expression: thus, a part of the juices that make up XO 200 was placed at the end of the maturing process in barrels of Norman oak from the Camembert forrest, a finish still unheard of in the world of spirits!
