UK Bartender’s Liqueur Recipe Is Welcomed Into Gabriel Boudier’s Bartender Range

Award-winning liqueur distillers, Gabriel Boudier, have launched the winning 2020 / 2021 Wizard’s recipe - Nori Seaweed Liqueur into their Bartender Liqueur Range.

Gabriel Boudier challenged the UK’s bartenders with the third National Wizard Award Competition, to create a new liqueur to join their award-winning range. The 2019-20 winner was Matthew Cusworth, from Hoot the Redeemer in Edinburgh, with his Nori Seaweed Liqueur, using a combination of Nori, Dulse, lime peel and grapefruit peel which secured him first place in the Wizard Finals in Dijon in January 2020. The liqueur has now been released this year by Gabriel Boudier and joins the other two Wizards creations Kaffir Lime Leaf (Samuel Boulton) and Mustard (Maria Vieira) in the Bartender Liqueur range. Matthew Cussworth commented: “As a bartender, I struggle to find consistent ways to introduce savoury flavours into my cocktails, so I’m very excited for Nori to launch and to see the inventive ways bartenders will use seaweed in their creations!”

This extraordinary and original liqueur achieves the delicate flavour balance by individually macerating dried Nori and Dulse seaweed for 3 weeks, then to be mixed with grapefruit alcoholate, concentrated lime juice, alcohol, sugar and water to obtain a liqueur at 22% abv. Signature serves include the Kanganawa Highball, (15ml Nori, 25ml Scotch Whisky, top with soda, garnish with Samphire or a Lemon Twist) and The Geisha (15ml Nori, 50ml Gin, 15ml Lemon Juice, 1 Egg White, garnished with Rose Petals in the shape of the Japanese flag).

The fitting water colour label design is the elegant and creative work of Becca Boyce, Matthew’s sister, who commented “I’m happy to see it come together so brilliantly – I especially liked the touch of embossing on the label”.
